Purple corn has long been used as a food source all over the world. More recently, it has caught the attention of the nutraceutical industry as a novel ingredient in functional food and supplements.
Purple corn phenolic compounds have been shown in numerous studies to have potential health‐promoting properties, which include antioxidant, anti‐inflammatory, and anticarcinogenic properties. Some studies found purple corn phenolic compounds to amend lifestyle diseases, such as obesity, diabetes, hyperglycemia, hypertension, and cardiovascular diseases based on their strong antioxidant power.
